Ingredients

  • 8 oz 93% lean ground turkey
  • 1 cup diced bell pepper (any color)
  • 2 green onions, sliced
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp pure maple syrup
  • 1 tsp rice vinegar
  • ½ tsp sesame oil
  • Pinch garlic powder & ginger powder
  • 1 head butter lettuce, leaves separated
  • Toasted sesame seeds, for garnish

Directions

  1. Brown turkey in a non-stick pan, break up chunks (5 min).
  2. Stir in bell pepper; cook 3 min.
  3. Add soy, maple, vinegar, sesame oil, seasonings; simmer 2 min till glossy.
  4. Spoon into lettuce cups, top with green onion + sesame seeds.
