Ingredients

  • 2 skin-on salmon fillets (4 oz each)
  • Salt, pepper, paprika
  • 1 Tbsp butter + 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • 2 medium zucchinis, spiralized
  • Juice of ½ lemon
  • 1 Tbsp chopped parsley

Directions

  1. Season salmon; sear skin-side down in butter-oil mix, 3 min. Flip, add garlic; cook 3–4 min.
  2. Remove salmon; same pan → toss zoodles 1 min just to heat (keep ‘em crisp).
  3. Finish with lemon juice + parsley; plate under salmon.
    Pro-tip: Pat salmon skin bone-dry first—crisps like a chip.
