Ingredients
- 1 large sweet potato, peeled & ½-inch cubes
- 1 Tbsp olive oil
- ½ tsp each cumin & smoked paprika
- 1 cup canned black beans, rinsed
- 4 small corn tortillas
- ¼ cup diced red onion
- ¼ cup chopped cilantro
- Lime wedges & hot sauce
Directions
- Toss sweet potato with oil + spices; roast 425 °F / 220 °C 18 min.
- Warm beans in small pot with splash water & pinch salt.
- Char tortillas over burner or in dry skillet.
- Fill tortillas: sweet potato, beans, onion, cilantro, squeeze lime.
Pro-tip: Air-fryer cuts roast time to 12 min flat.
