Sweet Potato & Black Bean Tacos

Ingredients

  • 1 large sweet potato, peeled & ½-inch cubes
  • 1 Tbsp olive oil
  • ½ tsp each cumin & smoked paprika
  • 1 cup canned black beans, rinsed
  • 4 small corn tortillas
  • ¼ cup diced red onion
  • ¼ cup chopped cilantro
  • Lime wedges & hot sauce

Directions

  1. Toss sweet potato with oil + spices; roast 425 °F / 220 °C 18 min.
  2. Warm beans in small pot with splash water & pinch salt.
  3. Char tortillas over burner or in dry skillet.
  4. Fill tortillas: sweet potato, beans, onion, cilantro, squeeze lime.
    Pro-tip: Air-fryer cuts roast time to 12 min flat.
