  • 2 fillets salmon fillets Look for firm, shiny salmon.
  • 2 tablespoons olive oil For coating the salmon.
  • 1 medium lemon Freshly squeezed juice.
  • 1 tablespoon fresh herbs Parsley or dill recommended.
  • to taste salt and pepper To season the salmon.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Coat the salmon fillets in olive oil.
  3. Squeeze lemon juice over the salmon, and season with salt and pepper.
  4. Sprinkle with fresh herbs.
Cooking
  1. Place the salmon on a baking sheet, optionally lined with foil.
  2. Bake in the preheated oven until edges are golden and the center is flaky, about 15-20 minutes.
  3. Check for doneness at the ten-minute mark.

Notes

Don't overbake the salmon as it dries out quickly. Let it rest for a few minutes after removing from the oven before slicing. Works well with roasted veggies or rice.
