Copycat Starbucks Egg Bites

These light and fluffy egg bites are a homemade version of Starbucks' popular breakfast item, customizable with your favorite fillings.

Ingredients
  

Main Ingredients
  • 6 large eggs
  • 1/2 cup cottage cheese Provides creaminess
  • 1/4 cup milk You can use any milk
  • 1 cup shredded cheese Cheddar, Swiss, or Monterey Jack recommended
  • 1/2 tsp salt
  • 1/4 tsp pepper
Fillings
  • 1/2 cup cooked bacon Chopped
  • 1/2 cup cooked ham Chopped
  • 1/2 cup fresh spinach Pre-cooked recommended
  • 1/4 cup roasted vegetables Could be any vegetable

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C). Grease your muffin pan or use silicone cups.
  2. In a blender, combine eggs, cottage cheese, milk, and shredded cheese. Blend until smooth.
  3. Pour the egg mixture into the muffin pan, filling each cup about 3/4 full.
  4. Add your desired fillings on top and gently jiggle the tray to ensure the fillings are immersed.
  5. Place the muffin pan in a larger pan and fill the larger pan with hot water until it comes halfway up the sides of the muffin pan.
Cooking
  1. Bake in the preheated oven for 22-28 minutes, until set but still slightly wobbly in the center.
  2. Remove from the oven and let cool for 5 minutes before attempting to remove them from the pan.

Notes

For best results, avoid overfilling the muffin cups and don't pack in too many veggies. These egg bites can be stored in an airtight container in the fridge for up to 4 days or frozen for later use.
