  • 2 cans butter beans or about 3 cups cooked
  • 2 tablespoons olive oil for cooking
  • 1 small onion, chopped for flavor
  • 2 cloves garlic, minced to enhance aroma and taste
  • 0.5 cup vegetable broth or water for simmering
  • 1 pinch smoked paprika for smokiness
  • 1 pinch dried thyme for seasoning
  • 1 tablespoon butter for richness
  • 1 splash cream optional, for extra creaminess

Method
 

Preparation
  1. Rinse the butter beans well and set aside.
  2. Heat olive oil in a large pan over medium heat.
  3. Add the chopped onion and sauté until soft, about 5 minutes.
  4. Stir in the minced garlic and sauté for another minute, until fragrant.
Cooking
  1. Pour in the butter beans, season with salt, pepper, smoked paprika, and dried thyme.
  2. Add the vegetable broth or water and simmer until thick and creamy.
  3. For extra creaminess, mash some beans against the side of the pot.
  4. Stir in butter and optional cream, taste and adjust seasonings as needed.
  5. For a silky texture, blend half of the mixture before stirring back into the pot.

Notes

Great for meal prep as it reheats well. Gets better the next day! Feel free to add greens like spinach or kale for extra nutrients.
