Sauce Ingredients
  • 1 can 15 oz full-fat coconut milk (unsweetened)
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons flour (gluten-free or regular)
  • 1/4 cup nutritional yeast for that cheesy taste
  • 1 teaspoon salt or more to taste
  • 1/2 teaspoon black pepper lots of it.
  • pinch nutmeg goes a long way

Method
 

Cooking Instructions
  1. Warm olive oil in a skillet over medium heat. Toss in minced garlic. Sauté for one minute until fragrant.
  2. Sprinkle in the flour while whisking. Cook for another 1-2 minutes to eliminate the raw flour taste.
  3. Slowly pour in coconut milk while whisking constantly. It will thicken up.
  4. Stir in nutritional yeast, salt, black pepper, and nutmeg.
  5. Simmer, whisking occasionally, for about 4-5 minutes until it’s silky. Adjust salt and pepper to taste.
  6. Pour over hot pasta immediately and enjoy.

Notes

This sauce is versatile and can be used in various dishes. If too thin, let it simmer to thicken. Feel free to add protein or veggies as desired.
