- Warm olive oil in a skillet over medium heat. Toss in minced garlic. Sauté for one minute until fragrant.
- Sprinkle in the flour while whisking. Cook for another 1-2 minutes to eliminate the raw flour taste.
- Slowly pour in coconut milk while whisking constantly. It will thicken up.
- Stir in nutritional yeast, salt, black pepper, and nutmeg.
- Simmer, whisking occasionally, for about 4-5 minutes until it’s silky. Adjust salt and pepper to taste.
- Pour over hot pasta immediately and enjoy.
Notes
This sauce is versatile and can be used in various dishes. If too thin, let it simmer to thicken. Feel free to add protein or veggies as desired.
