Preparation
- Preheat the oven to 350°F (175°C).
- In a small bowl, whisk together the plant-based milk and vinegar and let it sit for a few minutes.
- In a larger bowl, mix together the dry ingredients (flour, sugar, baking powder, baking soda, and salt) using a fork.
- Add the oil and vanilla extract to the milk mixture, then combine everything into the dry ingredients. Mix until there are no flour streaks.
- Pour the batter into a greased cake pan.
Baking
- Bake for 30-35 minutes, checking at 25 minutes for doneness with a toothpick.
- Allow to cool before frosting.
Notes
For extra richness, you can add a non-dairy yogurt. This recipe can easily be turned into a chocolate cake by substituting some flour with cocoa powder and adding a pinch of espresso powder for flavor.
