Ingredients
  

Dry Ingredients
  • 2 cups All-purpose flour Regular flour, gluten-free blend works too.
  • 1 cup Sugar White sugar or coconut sugar.
  • 1 tbsp Baking powder
  • 1 tsp Baking soda
  • 1 pinch Salt
Wet Ingredients
  • 1 cup Plant-based milk Oat or soy recommended for creaminess.
  • 1 tbsp Vinegar Helps the cake rise.
  • 1/2 cup Oil Vegetable, canola, or coconut oil.
  • 2 tsp Vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, whisk together the plant-based milk and vinegar and let it sit for a few minutes.
  3. In a larger bowl, mix together the dry ingredients (flour, sugar, baking powder, baking soda, and salt) using a fork.
  4. Add the oil and vanilla extract to the milk mixture, then combine everything into the dry ingredients. Mix until there are no flour streaks.
  5. Pour the batter into a greased cake pan.
Baking
  1. Bake for 30-35 minutes, checking at 25 minutes for doneness with a toothpick.
  2. Allow to cool before frosting.

Notes

For extra richness, you can add a non-dairy yogurt. This recipe can easily be turned into a chocolate cake by substituting some flour with cocoa powder and adding a pinch of espresso powder for flavor.
