Ingredients
  

For the latte
  • 1 cup non-dairy milk (oat, almond, or soy)
  • 1/2 cup strong brewed coffee (leftover works too)
  • 2 tablespoons pure pumpkin puree (not pumpkin pie mix)
  • 1-2 tablespoons maple syrup or brown sugar (to taste)
  • 1/2 teaspoon pumpkin pie spice (or mix of cinnamon, nutmeg, and ginger)
  • 1 splash vanilla extract
  • 1 pinch salt
  • coconut whip (optional) for topping

Method
 

Preparation
  1. In a small saucepan, combine the non-dairy milk, pumpkin puree, and sweetener.
  2. Heat over medium heat, whisking until blended and steam forms, but not boiling.
  3. Stir in the pumpkin pie spice, salt, and vanilla extract.
  4. Pour in the hot brewed coffee and whisk again until well combined.
  5. For extra frothiness, use a hand frother or shake in a mason jar.
  6. Pour the latte into a mug and top with coconut whip and more spice if desired.

Notes

Use creamy non-dairy milk for the thickest results and always opt for pure pumpkin puree. The pinch of salt enhances the flavors.
