  • 4 pieces bone-in chicken thighs or drumsticks Use whatever chicken parts you have on hand.
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar Cane vinegar is preferred for better flavor.
  • 8 cloves garlic, crushed Use more if you love garlic.
  • 1 tablespoon whole peppercorns
  • 2 pieces bay leaves

Method
 

Preparation
  1. Marinate the chicken in soy sauce, vinegar, crushed garlic, and peppercorns for at least 30 minutes.
  2. Heat oil in a large pan, then brown the chicken pieces until golden.
  3. Add the marinade and bay leaves to the pan, bringing to a gentle simmer.
  4. Cover and cook for about 30 minutes, flipping the chicken halfway through.
  5. Taste the sauce and adjust with more vinegar or soy sauce according to preference.

Notes

Adobo can be customized with added sugar or potatoes for sweetness. Leftovers taste even better the next day.
