Ingredients

Dry Ingredients
  • 2 cups gluten-free flour blend Choose a blend with xanthan gum for best results.
  • 1 teaspoon salt
  • 1 tablespoon instant yeast Ensure it's fresh.
  • 1 teaspoon sugar
Wet Ingredients
  • 1 cup warm water
  • 2 tablespoons olive oil Don't skip this for flavor.
  • 1 large egg Optional; can substitute with flax egg.

Method

Preparation
  1. Whisk together the dry ingredients: gluten-free flour blend, salt, instant yeast, and sugar.
  2. Mix in the wet ingredients: warm water, olive oil, and egg (if using).
  3. Use oiled hands to shape into a rough disc on parchment paper.
  4. Let it rise in a warm area for at least 25-30 minutes.
Cooking
  1. Preheat the oven and pre-bake the crust for about 10 minutes.
  2. Add toppings after pre-baking; avoid overloading them to keep the crust firm.
  3. Return to the oven until cheese bubbles and edges are golden.

Notes

For best results, pre-bake the crust on the lowest oven rack. Use fresh yeast and avoid ingredients that release too much water, like zucchini or tomatoes, to prevent a soggy crust.
