Ingredients
  

For the Chicken
  • 4 pieces chicken breasts Marinate for flavor.
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 teaspoons oregano Dried or fresh.
  • 1 teaspoon salt
  • 1 teaspoon pepper
For the Bowl
  • 1 cup cooked rice or quinoa Cook according to package instructions.
  • 1 cup cucumber, chopped Press to remove extra water before mixing.
  • 1 cup tomato, chopped
  • 1 small red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/2 cup kalamata olives, pitted
  • 1 cup tzatziki sauce Mix yogurt, grated cucumber, garlic, dill, and lemon juice.

Method
 

Preparation
  1. Marinate chicken breasts in olive oil, minced garlic, oregano, salt, and pepper for at least 30 minutes.
  2. Cook rice or quinoa according to the package instructions.
  3. Chop the cucumbers, tomatoes, and onions while the chicken is marinating.
  4. Prepare tzatziki sauce by mixing yogurt, grated cucumber, garlic, dill, and lemon juice; let chill.
Cooking
  1. Grill or bake the marinated chicken until cooked through, then slice it thin.
Assembly
  1. Assemble bowls with cooked rice or quinoa, sliced chicken, fresh veggies, feta cheese, and olives.
  2. Drizzle tzatziki sauce over the top and serve.

Notes

Serve warm bowls with extra lemon wedges and tzatziki on the side. Leftovers can be stored separately for freshness, to be consumed within 3 to 4 days.
