Ingredients
  

For the Chicken
  • 4 pieces chicken breasts Ensure they are similar in thickness for even cooking.
  • 2 tablespoons olive oil For marinating the chicken.
  • 1 tablespoon lemon juice Freshly squeezed is best.
  • 2 cloves garlic Minced.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon pepper Adjust to taste.
For the Salad
  • 4 cups mixed greens (romaine or spinach) Use whatever greens are fresh.
  • 1 cup cherry tomatoes Halved or quartered.
  • 1 cup cucumber Diced.
  • 1/2 cup red onion Thinly sliced.
  • 1/2 cup bell pepper Diced.
  • 1/2 cup feta cheese Crumble over the salad.
Dressing (optional)
  • 2 tablespoons lemon vinaigrette Or dressing of your choice.

Method
 

Prepare the Chicken
  1. Marinate the chicken breasts in olive oil, lemon juice, garlic, salt, and pepper for at least 30 minutes.
  2. Preheat the grill to medium heat.
  3. Grill the marinated chicken for about 4-6 minutes on each side until cooked through and juices run clear.
  4. Let the chicken rest for a few minutes before slicing.
Assemble the Salad
  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, bell pepper, and feta cheese.
  2. Slice the grilled chicken against the grain and add it on top of the salad.
  3. Drizzle dressing over the salad and season to taste with additional salt and pepper.

Notes

Experiment with different greens and toppings like grilled corn or olives for variation. For dairy-free options, skip cheese or use avocado. Try a yogurt dressing for a refreshing twist.
