Grilled Cod With Romesco Sauce

Ingredients
  

For the Cod
  • 24 ounces Cod fillets, fresh or thawed About 6 ounces per person
  • 4 tablespoons Olive oil Standard bottle quality
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black pepper To taste
  • 1 teaspoon Smoked paprika For flavor
  • 1/2 teaspoon Garlic powder For flavor
For the Romesco Sauce
  • 1 jar Roasted red peppers Jarred makes it easy
  • 1/2 cup Toasted almonds Pecans can be used if needed
  • 2 tablespoons Tomato paste
  • 2 tablespoons Vinegar White wine or red vinegar both work
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 teaspoon Salt To taste

Method
 

Preparation
  1. Pat the cod fillets dry with a paper towel.
  2. Sprinkle olive oil on both sides of the fish.
  3. Season with salt, pepper, smoked paprika, and garlic powder. Pat the seasoning in.
  4. Preheat the skillet on medium-high heat.
Cooking the Cod
  1. Place the fillets in the hot skillet and let them cook for 2-3 minutes without moving them.
  2. Flip the fillets once and cook for another 2-3 minutes until they flake easily.
  3. Remove from skillet and set aside.
Making the Romesco Sauce
  1. In a blender or food processor, combine roasted red peppers, almonds, olive oil, vinegar, garlic, tomato paste, and salt.
  2. Pulse until mostly smooth, leaving some texture if desired.
  3. Pour the sauce into a bowl.
Serving
  1. Spoon the romesco sauce over the cooked cod and serve.

Notes

Serve with additional romesco sauce on the side. Cod should be firm and white or off-white. Freshness is key when selecting cod.
