Homemade Spaghetti Sauce

Ingredients
  

Base Ingredients
  • 2 lbs Tomatoes (fresh, preferably Roma) Can also use San Marzano or cherry tomatoes.
  • 2 tablespoons Olive oil Use a good quality olive oil.
  • 1 medium Onion (yellow or white)
  • 3 cloves Garlic Finely chopped.
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Sugar To balance acidity.
  • 2 teaspoons Dried basil Or use fresh if available.
  • 2 teaspoons Dried oregano Or fresh as preferred.
  • 1/4 teaspoon Red pepper flakes Optional for added heat.

Method
 

Preparation
  1. Wash, peel (if desired), and chop the tomatoes.
  2. Dice the onion and mince the garlic.
Cooking
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the chopped tomatoes, salt, pepper, sugar, basil, oregano, and red pepper flakes.
  5. Bring the mixture to a simmer and reduce to low heat, cooking uncovered for at least 30 minutes, stirring occasionally.
  6. Taste and adjust seasoning if necessary.

Notes

Let the sauce cool before storing. Keep in the fridge for up to a week or in the freezer for up to three months. Reheat gently on the stovetop.
