Preparation
- Wash, peel (if desired), and chop the tomatoes.
- Dice the onion and mince the garlic.
Cooking
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the chopped tomatoes, salt, pepper, sugar, basil, oregano, and red pepper flakes.
- Bring the mixture to a simmer and reduce to low heat, cooking uncovered for at least 30 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary.
Notes
Let the sauce cool before storing. Keep in the fridge for up to a week or in the freezer for up to three months. Reheat gently on the stovetop.
