- In a big skillet, heat olive oil over medium heat.

- Stir in the chickpeas, smoked paprika, cumin, and lemon juice.
- Cook for about 5 minutes, allowing the chickpeas to soak up the flavors.
- If desired, stir in crushed tomatoes for a saucier dish, and simmer.
Roasting Variation
- Toss chickpeas with spices and olive oil on a baking sheet.
- Roast in the oven at 400°F (200°C) until golden and slightly crunchy.
Notes
Chickpeas taste better if marinated overnight. They can last in the fridge for up to 4 days and can be frozen for up to 2 months.
