Dressing
- In a separate bowl, whisk together olive oil, lemon juice, oregano, salt, and red wine vinegar.
- Pour dressing over the pasta mixture, mixing well. Taste and adjust seasoning as needed.
Serving
- For best flavor, let the salad sit in the fridge for 30 minutes before serving. Stir before serving.
Notes
Leftovers can be stored in an airtight container in the fridge for 2-3 days. Stir before serving, adding a little olive oil or lemon if it seems dry. Not recommended for freezing as it may become mushy.
