Ingredients
  

Pasta and Base Ingredients
  • 8 oz rotini pasta Can substitute with other types like penne or bowties.
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1/2 medium red onion, diced
  • 1 cup feta cheese, crumbled Can substitute with chickpeas for a dairy-free version.
  • 1/2 cup black olives, sliced Substitute with bell peppers if preferred.
  • 1/4 cup fresh herbs (parsley or basil), chopped
Dressing
  • 1/4 cup olive oil
  • 2 tbsp lemon juice Adjust to taste.
  • 1 tsp dried oregano
  • to taste salt Use salty pasta water for best flavor.
  • 1 tbsp red wine vinegar Optional.

Method
 

Preparation
  1. Cook pasta according to package instructions until al dente. Drain and chill.
  2. In a large bowl, combine the chilled pasta with cherry tomatoes, cucumbers, red onion, feta cheese, olives, and herbs.
Dressing
  1. In a separate bowl, whisk together olive oil, lemon juice, oregano, salt, and red wine vinegar.
  2. Pour dressing over the pasta mixture, mixing well. Taste and adjust seasoning as needed.
Serving
  1. For best flavor, let the salad sit in the fridge for 30 minutes before serving. Stir before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for 2-3 days. Stir before serving, adding a little olive oil or lemon if it seems dry. Not recommended for freezing as it may become mushy.
