Ingredients
  

Main Ingredients
  • 4 pieces chicken thighs or breasts Can be swapped for fish or plant-based protein.
  • 1 cup pitted olives Use green or black olives as per preference.
  • 1 whole lemon, sliced
  • 3 cloves garlic, minced Adjust according to taste.
Vegetables
  • 2 cups chopped spinach Add towards the end of cooking to avoid mushiness.
  • 1 large onion, chopped
Spices and Seasonings
  • 1 teaspoon thyme Fresh or dried.
  • 1 teaspoon oregano Fresh or dried.
  • 1 teaspoon black pepper Adjust to taste.

Method
 

Preparation
  1. Chop all vegetables and prepare chicken.
  2. Layer onion and harder vegetables at the bottom of the slow cooker.
  3. Place chicken on top of the vegetables and season with spices.
  4. Add olives, garlic, and lemon slices on top.
Cooking
  1. Cover and cook on low for 8 hours or high for 4 hours.
  2. Add spinach in the last 30 minutes of cooking.
Serving
  1. Serve warm with a side of grains like couscous or whole-wheat pasta.

Notes

You can replace chicken with plant-based proteins or fish. If using quick-cooking grains, add them in the last hour of cooking.
