Preparation
- Chop all vegetables and prepare chicken.
- Layer onion and harder vegetables at the bottom of the slow cooker.
- Place chicken on top of the vegetables and season with spices.
- Add olives, garlic, and lemon slices on top.
Cooking
- Cover and cook on low for 8 hours or high for 4 hours.
- Add spinach in the last 30 minutes of cooking.
Serving
- Serve warm with a side of grains like couscous or whole-wheat pasta.
Notes
You can replace chicken with plant-based proteins or fish. If using quick-cooking grains, add them in the last hour of cooking.
