Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and minced garlic, and sauté until fragrant.
  3. Stir in shredded chicken, beans, green chiles, chicken broth, cumin, salt, and pepper.
  4. Bring the mixture to a gentle simmer.
  5. Simmer for 20-25 minutes, stirring occasionally.
  6. For a creamier texture, blend a cup of the chili and stir it back into the pot.

Notes

Top with shredded cheese, sour cream, and cilantro. Serve with cornbread or saltines. Add a squeeze of fresh lime for extra flavor.
