Ingredients
  

Smoked Sausage
  • 1 lb Smoked sausage (any kind you like) Options include kielbasa, andouille, or chorizo.
Beans & Vegetables
  • 2 cans White beans, drained and rinsed Canned or cooked from dry.
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced Do not skip the garlic!
  • 1 can Diced tomatoes Canned is fine.
Herbs & Oil
  • 1 tbsp Olive oil For cooking.
  • 1 tsp Dried thyme or oregano Optional but enhances flavor.

Method
 

Preparation
  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and garlic; sauté until translucent.
  3. Slice the smoked sausage and add it to the skillet; cook until browned.
  4. Stir in the beans and diced tomatoes.
  5. Add thyme or oregano and simmer for about 20 minutes, stirring occasionally.

Notes

Feel free to add greens like spinach or kale towards the end for extra nutrition. Leftovers are great and can be eaten cold or reheated. Experiment with different types of sausage!
