- Heat olive oil in a skillet over medium heat.
- Add diced onion and garlic; sauté until translucent.
- Slice the smoked sausage and add it to the skillet; cook until browned.
- Stir in the beans and diced tomatoes.
- Add thyme or oregano and simmer for about 20 minutes, stirring occasionally.
Notes
Feel free to add greens like spinach or kale towards the end for extra nutrition. Leftovers are great and can be eaten cold or reheated. Experiment with different types of sausage!
