  • 1 package Smoked sausage (any kind like kielbasa, andouille, or chorizo)
  • 2 cans White beans, drained and rinsed Canned or cooked from dry
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced Trust me, don’t skip the garlic.
  • 1 can Diced tomatoes Canned is fine
  • 1 tablespoon Olive oil For cooking
  • 1 teaspoon Dried thyme or oregano Optional but recommended

Method
 

Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onion and sauté until softened.
  3. Stir in minced garlic and cook until fragrant.
  4. Add sliced smoked sausage and cook until browned.
  5. Add drained white beans, diced tomatoes, and herbs. Stir to combine.
  6. Let it simmer for about 10 minutes to allow flavors to meld.
  7. Adjust seasoning as needed and serve warm.

Notes

You can add leafy greens at the end for more nutrition. Leftovers reheat beautifully, and this dish is forgiving with ingredient amounts. Experiment with different types of sausage for varied flavors.
